Above I have the "selfie" I took, the outline, and the picture without my "selfie" behind it. First we took a picture and then transferred it into an iPad app. Once in the iPad app, we created another layer on top the photo to draw on. We did this because it allowed us to take away the picture and see our sketch after, it also meant if we messed up we didn't have to erase the background picture as well. We also could have drawn or created a grid on our sketch to help us with proportions. After tracing it in the iPad app, we would grab a piece of rough draft paper and draw out picture on that. It might seem like a lot of extra steps and we could have just taken a picture and skipped the outlining but I found the outlining was really helpful. I found that when I'm having trouble drawing something I either need to turn it upside down or outline it first this helps me to get used to the general shape of what I am drawing.
